Cheesy Zucchini Muffins

Ingredients

  • 2 medium zucchinis

  • 5 eggs

  • 1 small white onion

  • ½ cup (75g) gluten free plain flour

  • 120g grated cheddar cheese

  • Salt and pepper

Method

  1. Preheat oven to 200 degrees Celsius (fan-forced) and cut 12 baking paper squares to fit inside shallow cupcake tray.

  2. Chop the onion and sauté in a pan with a teaspoon of olive oil, stirring regularly until browned.

  3. Grate the zucchinis into a large mixing bowl. Add eggs, gluten free flour, onion, grated cheese and salt and pepper. Mix with a spoon until well combined.

  4. Divide mixture between cupcake tray and cook for 12-15 minutes.

Store in an air tight container in the fridge.
