Cheesy Zucchini Muffins

Ingredients
2 medium zucchinis
5 eggs
1 small white onion
½ cup (75g) gluten free plain flour
120g grated cheddar cheese
Salt and pepper
Method
Preheat oven to 200 degrees Celsius (fan-forced) and cut 12 baking paper squares to fit inside shallow cupcake tray.
Chop the onion and sauté in a pan with a teaspoon of olive oil, stirring regularly until browned.
Grate the zucchinis into a large mixing bowl. Add eggs, gluten free flour, onion, grated cheese and salt and pepper. Mix with a spoon until well combined.
Divide mixture between cupcake tray and cook for 12-15 minutes.
Store in an air tight container in the fridge.
