Stewed Apple & Quinoa Porridge

Ingredients

  • ½ apple, cut in small cubes

  • ½ teaspoon cinnamon

  • 1 teaspoon 100% pure maple syrup

  • ¼ cup water

  • ½ cup quinoa flakes

  • 1 cup almond milk (I used Pure Harvest Organic Almond, or you can use another plant based milk of your choice)

  • ¼ frozen blueberries

  • 1 tablespoon almond butter

  • ½ banana, cut in slices

  • 2 strawberries, cut in slices

  • 1 tablespoon pepitas

  • 30g hemp seeds

  • 2 tablespoons vanilla coconut yoghurt

Method

  1. Add cut apple, cinnamon, maple syrup and water to a sauce pan and bring to a simmer. Simmer until water reduces down and apples become soft.

  2. Add quinoa flakes, almond milk, blueberries and almond butter and cook on a low heat for 3-5 minutes or until quinoa flakes are cooked.

  3. Spoon porridge into a bowl and sprinkle over hemp seeds and pepitas.

  4. Add coconut yoghurt, strawberries and banana and serve.
