Stewed Apple & Quinoa Porridge

Ingredients
½ apple, cut in small cubes
½ teaspoon cinnamon
1 teaspoon 100% pure maple syrup
¼ cup water
½ cup quinoa flakes
1 cup almond milk (I used Pure Harvest Organic Almond, or you can use another plant based milk of your choice)
¼ frozen blueberries
1 tablespoon almond butter
½ banana, cut in slices
2 strawberries, cut in slices
1 tablespoon pepitas
30g hemp seeds
2 tablespoons vanilla coconut yoghurt
Method
Add cut apple, cinnamon, maple syrup and water to a sauce pan and bring to a simmer. Simmer until water reduces down and apples become soft.
Add quinoa flakes, almond milk, blueberries and almond butter and cook on a low heat for 3-5 minutes or until quinoa flakes are cooked.
Spoon porridge into a bowl and sprinkle over hemp seeds and pepitas.
Add coconut yoghurt, strawberries and banana and serve.
